Ingredients :
  • 1tbsp olive oil
  • 1 red onion,peeled and diced
  • 3 tsp Thai green curry paste
  • 500g (1 lb 2oz) new potatoes,chopped
  • 800ml (11/3 pts) vegetable stock
  • 400ml (14 floz) coconut milk
  • 2 tbsp crunchy peanut butter Juice of half a lime


Seasoning :
  • 2 tbsp peanuts,chopped
  • 1 tbsp freshly-chopped parsley
Method :
  1. Heat the oil in a pan and saute the onion untl softening.
  2. Stir in the Thai curry paste and cook for one minute.
  3. Add the potatoes and stir well to mox with the spicy onion.
  4. Pour in the stock and coconut milk,bring to a boil then potatoes are tender,but not too soft.
  5. Stir in the peanut butter,lime-juice and seasoning.
  6. Serve sprinkled with chopped peanuts and parsley.
